Banana Pie (Banoffee) - The english version

Ingredients


Pie Bottom
2 cups. biscuits
175 g butter or margarine Filling
2 cans (about 800 g) sweet condensed milk 
3-4 pcs. bananas 
2 cups heavy cream 

Toppings

Grated dark chocolate or sieved cacao powder

Procedures


Pie Bottom


1. Pre-heat the oven to 175 degrees celius.
2. Crush the biscuits in a mixer and mix them with the melted butter together. 
3. Press the mixture in the bottom and slightly up on the sides of a grooved pie form.
4. Bake it in the oven for about 10 minutes and set it aside.

Filling

5. There are two options to cook the condensed milks.

Option 1: Remove the labels on the cans and cook them for about 2 hours and 30 minutes on the boiling water in a pan with cover. It is important that the level of the water is higher than those cans. The longest it takes, the firmer the consistence to be. 
Option 2: Open those cans and pour the milks into the cooking pan. Cook and stir them often until it becomes firm and the colors become golden light brown like a caramel color. 
6. Option 1: Take up those cooked cans and let them cool down before you open them. 
   Option 2: Pour the cooked condensed milk into the pie form (which you have already the baked crushed biscuits on the bottom) while it is still hot so it is easy to spread it. Or it is also okey if you want to cool it down first before putting it onto the pie crust.
7. Prepare your heavy cream and slice the bananas.
8. After filling the those cooked condensed milks into the pie crust, add a layer of slices banana to it. 
9. Spoon the heavy cream to the top of the slices bananas and spread it. 
10. Sprinkle over the grated dark chocolate or the sieved cacao powder.

Easy Vanilla Cake Recipe


This vanilla cake recipe is very easy and very yummy. This is a single cake so you don't need to slice it and put the fillings in the middle. Instead, put the fillings on the top of it. It is up to you if you want to spread the icing around too. You can also sprinkle some types of berries or sliced fruits as your cake's toppings. Here I have the slices of young coconut meat and slices of  rambutan meat as my toppings. This is good together with coffee or tea as well as if you want it to be a birthday cake or any celebration's cake, much better if you spread the icing around it.

Here's how the cake look likes when it has no icing or toppings yet. I put the other side up where I should have my toppings.



Ingredients

Cake
1 and 1/3 cups flour
1 cup white sugar
1 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
1/4 cup water
1/3 cup cooking oil
1/2 tbsp. vanilla extract
1 egg

Icing
1/2 cup heavy cream, add 1/2 cup if you want to use some around your cake too.
1 tsp. vanilla sugar or 1/2 tsp. vanilla extract, double this if you have added 1/2 cup in your heavy cream.

Toppings
Berries or slices of fruits 

Procedures

1. Pre-heat the oven to 175 degrees celicus.
2. Sieve and combine the dry ingredients in a bowl.
3. Add milk, water, and cooking oil to the dry ingredients. Mix well.
4. Add the egg and mix well. Then add the vanilla extract and mix them well.
5. Grease the baking pan ( it is about 20 cm in diameter ) with oil or butter. This is to make sure that both sides won't stick when baked.
6. Bake it in the oven for 25 minutes.
7. Let cool down in a rack. Put the other side up before putting the toppings or icings.
8. Combine the heavy cream and the vanilla sugar or extract together and mix well. Spread it on the top of the cake.
9. Sprinkle berries as your toppings or put slices of fruits on it.
10. Serve and enjoy!

Chicken Nuggets

These chicken nuggets are really yummy and crispy. The crispiness of these nuggets stays longer as long as they didn't have been in the refrigerator. It is good with a dipping sauce or even with just a simple ketchup. I usually have these with french fries or fried potatoes. You can even pair this to rice. This recipe is good for 2-3 persons.

Ingredients

For marinating
2 pcs. chicken breast
1/2 tsp. lemon pepper
1/2 tsp. dried parsley
1/2 tsp. paprika powder
1/2 tsp. garlic powder
1 tsp. sesame oil
1/4 tsp. salt
1/4 tsp. ground black pepper

For coating
1/2 cup flour
1 cup milk
1 and 1/2 cups breadcrumbs, I prefer Panko breadcrumbs
3-4 tbsp. sesamie seeds

Cooking oil, for frying

Procedures

Marinating
1. Slice the chicken in a 3 cm in sizes. Marinate the sliced chicken with the listed ingredients above for atleast 15 minutes.

Coating / Frying
2. You can start heating the cooking oil in the fan for frying soon. You must used about half in a pan cooking oil, so I recommend you to use small pan for frying.
3. Pour the flour into the marinated chicken and mixed well.
4. Prepare the dipping ingredients in a small bowl. Mix the breadcrumbs with sesamie seeds.
5. Dip each chicken with the use of the fork into the milk, then roll it in the breadcrumbs-sesamie seeds mixtures. Do it for the rest of the chickens.
6. Fry the coated chickens into the heated cooking oil. Fry them until golden brown.
7. Put the fried chickens into the plate with a tissue paper under it, this is to absorb the oil. Or you can put them in the sieve to let the oil drops down before putting it in the plate.
8. Serve and enjoy!


Bananpaj (Banoffee)


Ingredienser


Kexbotten
4 dl. digestivekex175 g smör Fyllning
2 burkar (ca 800 g) sötad kondenserad mjölk 
3-4 st bananer 
4 dl vispgrädde 

Garnering

Riven choklad eller siktad kakao pulver

Gör så här


Kexbotten


1. Sätt ugnen på 175 grader.
2. Krossa kexen till små smulor i en mixer och blanda dem med smält smör. 
3. Tryck ut blandningen i botten och upp på kanten av en räfflad pajform med urtagbar botten.
4. Grädda kexbotten i mitten av ugnen i cirka 10 minuter och låt det svalt. 

Fyllning

5. Det finns två sätt att koka upp den kondenserade mjölken. 

Alternativ 1: Ta bort etiketterna på burkarna och koka den kondenserade mjölken i cirka 2,5 timmar i en kastrull med lock (det är viktigt att burkarna hela tiden är täckta med vatten). Ju längre man kokar mjölken desto fastare konsistens.
Alternativ 2: Öppen burkarna och häll mjölken till en kastrull. Koka dem tills de blir tjockare och färgerna blir i fina bruna, liksom i karameliserad färg.
6. Alternativ 1: Ta upp burkarna och låt dem svalna innan du öppnar dem.
   Alternativ 2: Låt dem kokade kondenserade mjölkarna att svalna innan du häller dem på degen. (Eller) Du kan också hälla det omedelbart medan det är varmt.
7. Vispa grädden fluffigt och skiva bananerna.
8. Fyll pajskalet med dem nykokta mjölkarna och lägg på ett lager av skivad banan.
9. Skeda den vispgrädden ovanför dem skivade bananerna. 
10. Strö över den rivna chokladen eller den siktad kakaon.

Coffee cake with coconut flakes toppings



This recipe can have 10-15 slices. This is simple, delicious and perfect for coffee or tea. This cake have many other names in Swedish, like Snoddas, mockarutor, etc. But in this recipe, I have added some of my own ingredient to make it better with the consistency.

Ingredients:


For the cake mixture, you will be needing:

1/2 cup margarine or butter, melted
1 egg
1 cup White sugar
1 teaspoon vanilla sugar or 1/2 teaspoon vanilla extract
1 tablespoon cocoa powder, sieved
1 and 1/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
3/4 cup milk or water

Note: If you are using deciliter instead of cup, the measurement should be the following:
1 dl. margarine or butter, melted
1 egg
1 and 1/2 dl. white sugar
1 tsp. vanilla sugar or 1/2 vanilla extract
1/2 tbsp. cocoa powder, sieved
2 and 1/4 dl. flour
1 tsp. baking powder
1/2 tsp. baking soda
1 dl. milk or water



Toppings:


2 tablespoon margarine or butter, melted
1 and 1/2 tablespoon cold coffee
1 tablespoon cocoa, sieved
1 teaspoon vanilla sugar or 1/2 teaspoon vanilla extract
1 and 1/4 cup powdered sugar or icing sugar / If you are using deciliter, it should be 1 and 3/4 dl.

To finish and decorate the toppings:

Coconut flakes.

Procedures:

  1. Heat the oven to 175 °C.
  2. Whisk the egg and sugar until puffy.
  3. Combine all the dry ingredients. Add them to the egg-sugar mixture with the alternate of milk and melted butter.
  4. Prepare the baking pan of about 15cmx20cm and grease it with butter or margarine. This is to make sure that the mixture won't stick on each sides of the baking pan. Pour the cake mixture into the baking pan.
  5. Bake the cake in the heated oven for about 30-35 minutes.
  6. Let the cake cool down in the room temperature.
  7. Menwhile, mix the dry ingredients for the toppings. Add the melted butter or margarine and the cold coffee into the mixture. Mix well.
  8. Once the cake has cooled down, pour the toppings on the cake.
  9. Sprinkle the coconut flakes above the toppings.
  10. Slice, serve and enjoy your coffee or tea!
